Peas and Carrots Vegetable Casserole



1-1/2c chopped frozen pea pods
1/2 med. onion - chopped
1 grated carrot
1T butter
1/8c water
1c frozen peas
2/3c stuffing mix


Saute' the first 5 ingredients, then cover and simmer 5 minutes.  Add peas and stuffing, toss together, cover and continue to cook another 5-10 minutes.  Great, quick side, or as a vegetarian main dish. . .Lin
