Cilantro-Lime Chicken, Beans and Rice

1# cilantro-lime chicken breasts
1c 6-Grain Rice
1 lemon or lime - juice and peel
6 garlic cloves - minced
1c chopped celery
1c chopped onion
1-2T cilantro (coriander) chutney
1c Chi-Chi's medium cilantro salsa

1 can black beans - rinsed-drained

Combine the first 8 ingredients in a big pot.  Bring to a simmer, cook for 5 minutes, then cover and chill, overnight or several hours, to marinate.  Remove lemon-lime pieces.  Bring to a simmer again then add 1½c water and beans.  Simmer another 45 minutes or until rice is cooked.  This turned out so well!  Flavorful with lots of great ingredients.  I'm not sure though if it should be called a soup or a small stew.  It would be so good with some oatmeal-cornbread too! . .Lin
