1-2 cans of white beans. If using only one, this can be served over buttered pasta
1 T peppered olive oil
2 T butter
14 oz smoked turkey sausage – cut into cross-sections
1 lg onion – chopped
¼ c chopped garlic
Put chopped kale in a big pot of cold water. Bring to a boil, simmer 10 minutes then drain in colander. Drain and rinse the beans.
In a large wok or frying pan, combine olive oil, butter and about ¼ of the onion chopped very fine. Cover and sauté with the sausage for 5-10 minutes. Sausage should brown a little during this time. If needed add some water, chicken stock, white wine or beer to encourage browning. Then add the rest of the chopped onion and garlic and more liquid if necessary. Continue to stir and cook another 5-10 minutes. Add the beans and kale, stir together and heat. . .Lin
