OOhhh, Yummy, Wonderful Eggs!

Last fall I had some blood-work done to check for allergies-sensitivities.  Eggs were at the top of the list, followed by peanuts, mushrooms, vinegar, sugar, honey and several other random things.  I haven't had one whole egg since then - which was a huge change since at that time I was eating 15-18 a week.

Recently I decided to test the theory that sometimes all that's needed is to eliminate the offending food a while then slowly reintroduce it.  Ideally, in baking, then maybe with one egg every few days.  So, I bought a dozen at Farmer's Market yesterday.





This combination sounded so good to me I thought, oh what the hell!  I'm going to be home a while.  What's the worst that can happen?  Nothing I'm hoping.  It's so much easier for me to lose weight when I start the day with eggs.  Or maybe at least one.






Broccoli, Ham and Eggs

Broccoli florets - Steam in a small frying pan until the color gets bright and the stems are tender.

3oz  chopped or sliced ham
2 sm-med free-range eggs

Brown the ham in a dry pan.  When it sizzles and 'spits', add a little butter, stir and continue to brown.  Meanwhile, crack eggs in a bowl then stir gently, just to blend the whites and yolks a bit.  Pour the eggs over the ham.  Stir gently, just to keep eggs from sticking or burning.  Add broccoli and continue to stir till the eggs are done.  This is an individual serving. . .Lin
