2-1/2# lean beef ribs
1/2 c water
1 T whole peppercorns
1/2 c water
1 T whole peppercorns
2 sm carrots - chopped
1/2 onion - chopped
1/2 c barbecue sauce
2 T dijon mustard
1/2 c barbecue sauce
2 T dijon mustard
Combine all in a crock-pot. Cook on high 1 hour then turn to low for another 5-6 hours. Turn heat back to high. Once liquid boils, cook uncovered another hour to evaporate liquid. Add barbecue sauce, mustard and continue to cook - covered, on low until ready to serve. . .Lin
