I wasn't planning to post tonight, but dinner turned out so well that I'm doing it anyway, sort of after-the-fact.
Chunky Salad
1 Roma tomato
2 mini English cucumbers
1/2 a perfect avocado :-)
1/4 Vidalia onion
cilantro and dressing
Slice, the above, add cilantro and dressing. . .Lin
Shrimp with Peas, Beans and Onions
1 c frozen peas
3/4 Vidalia onion
1T butter
Saute' these for a few minutes with a little sea salt and a sprinkle of cayenne pepper, then add:
1/2 15.5oz can of red beans, rinsed and drained
12 med sized shrimp
Saute' another 5 minutes or so. . .Lin
My original goal here was to create a new recipe daily, or several times a week - cook, photograph and post each one. I've been doing this since April 2011 and. . .as of today. . .I now have over 1,900 original recipes and informational posts! I'm thinking a couple cookbooks will be down the road a bit!
