1/2# beef steak
1/4 onion-finely chopped
8-12 oz white wine or light colored beer
3 lg carrots
1/2 bunch of celery
3/4 lg onion-bigger pieces
Cut the meat in cubes or larger pieces. Brown meat and chopped onions in a little butter and olive oil. When well browned, deglaze with beer or wine. Continue browning and deglazing until meat and pot is very brown. Add a little more liquid then put in sliced carrots and celery along with the canned and packaged soups. Mix everything well. Simmer, covered, in a little more wine or beer for an hour or longer. Then let everything 'rest' a while.

After another hour or so, chop the rest of the onion, quarter the potatoes, stir those in, then return everything to a simmer another 1/2 hour or so. Goes well with biscuits.
