Chicken Surprise For One



I really wanted chicken for lunch today.  I bought a big pack of boneless-skinless thighs yesterday - but then I found a 4oz piece of leftover chicken breast meat I had cooked up many days ago.  I used that instead.


4 oz   boneless chicken - chopped
1/2     onion - sliced or chopped
1 sm  sweet potato - halved then sliced
3/4c   frozen peas







Combine the first 3 ingredients in a non-stick pan with 1T each:  butter, extra virgin olive oil and white balsamic vinegar.  Stir and saute' hot and fast for 5-10 minutes.  Add about 1/4c water and thawed peas.  Heat together on low another 5 minutes.  Serve with bread, salad, etc. . .Lin
