. . .and yet Another Shrimp Scampi

We loved this.  It seems I make it a lot, so tonight I wasn't going to just post another scampi recipe.  Then I tried it and thought it would be worth a picture.  This is a simple throw together sort of thing.  It went from dry pasta, frozen peas and shrimp, to dinner in about 20 minutes.


1-1/2c frozen peas
1          med onion
1T       butter
12oz   frozen shrimp
3/4c    light sour cream
1-2T   dill

Saute' the peas and onion slices in a little water till the onions are translucent.  Add remaining ingredients and simmer a few minutes longer.  If sauce is too thin, sprinkle in some cornstarch or flour, stir then bring back to a simmer.  Serve over angel hair pasta. . .Lin
