Beans, Eggs and Broccoli


A BIG, and quick, breakfast-for-one for a busy day:

1-1/2c   chopped fresh broccoli
1 sm      onion - sliced-chopped
1 T         butter
1/2 can  light red kidney beans
2 med    eggs
1/4 c      shredded cheddar
               cheese - optional

Saute' the broccoli and onion in a covered non-stick pan until the broccoli brightens and the onion is translucent.  Add the well drained, rinsed beans and stirred eggs.  Cook until the egg sets, with a little cheese.



This breakfast is 'nutrition dense' but not low calorie.  With cheese, it contains around 600 calories.  However, it's also high in soluble fiber--16gm-which is about half our daily fiber requirement - from some wonderful sources. Broccoli-3gm, onion-1gm, beans-12gm — Beans rock!   I'll be posting more information here soon regarding the value of beans in our diets.  They're truly a Wonder Food! . . . Lin
