I guess this is an 'everything' breakfast, packed with nutrition and a good one for a long busy day when you won't be eating for a while. The beans and cheese shown wouldn't be my first choice, but it was what I had the most of - this can be so varied. . .The only real constant here is the eggs - so be creative!
1c fresh vegetables - chopped
1/2 can beans (red, black, kidney,
black eyed peas, garbanzos. . .)
rinse well and drain
2 very fresh eggs
1/3c grated or crumbled cheese
Steam the vegetables in a little water, with the beans for 3-5 minutes. Add a little butter if you want, or just crack the eggs in while there's still a little water in the pan. Stir a little and cook on low until done. Top with cheese. This breakfast contains 390 calories, 15g fiber, 16g protein, 550g sodium (blue cheese is very high in sodium) and about 35g carbs. . .Lin
