Chorizo Chicken Soup

1½# chicken pieces
Simmer chicken in about 4 cup of water for an hour or two. Trim off the fat and cut the chicken into bite-size pieces. Chill the broth then skim the fat off.




Chop:
2 med onions
1 clove elephant garlic
3 c celery and carrots
6 oz chorizo - casing removed
6± baby Yukon Gold potatoes




Saute' the onions, garlic, celery and carrots in 1 T butter and ½ cup of water. Add chorizo and another cup or two of water. Simmer, covered, for 5-10 minutes. Add potatoes and original chicken stock. Simmer another 30 minutes, add chicken, heat a little longer and serve. . .Lin
