Shrimp and Vegetable Lo Mein

1 carrot
1 celery stalks
1 elephant garlic clove
1 med. onion – or a few
  green onions – sliced
1 T toasted sesame or vegetable oil

1-15oz can baby corn cobs
1 c frozen peas (not shown)
2 T sweet chili sauce
2 T tamari or soy sauce
2 T apricot or plum jam
8oz dry pasta cooked, drained-rinsed
1-14oz pkg. frozen shrimp



Saute'-stir-fry the first 4 ingredients in the oil until crisp-tender. Add the drained baby corn cobs, peas, sauces and jam. Heat, covered, 5-10 minutes to blend the flavors. Combine with drained pasta. Add the pre-cooked, thawed shrimp and heat just until it turns a bit more pink. Mix and serve. . .Lin
