Chicken, Potatoes and Asparagus



1½# boneless chicken thighs
   flour - seasoned w/ 2T Pampered
   Chef's Citrus & Basil Rub

Coat the chicken with seasoned flour and bake at 350° 30± minutes, flipping half way through. Chicken is done when a fork slips in and out of thickest part of the meat easily.



1 bunch of asparagus
3 Yukon Gold potatoes
1 med. red onion
1-2T each: butter, olive oil and balsamic vinegar
sea salt & fresh ground pepper




Chop, slice the vegetables – except asparagus tops – and combine in a non-stick pan with butter, oil and vinegar. Cook, stir 10 minutes. Add salt & pepper, asparagus tops and cook another 5 minutes. Makes 4 servings. . .Lin
