Ginger-Craisin Coleslaw


½c craisins
2T good, fruity balsamic vinegar
1T extra virgin olive oil
a drizzle of Maple syrup
fresh ground pepper
pinch of sea salt
1t fresh grated ginger

Combine all the above. Microwave for 30 seconds. Stir and microwave again if you didn't smell the vinegar after the first 30 seconds. Then add the following thinly sliced-diced vegetables:





2 carrots
2 stalks of celery
1 Vidalia onion

Toss and chill a couple hours before serving. . .Lin
