Beans & Things



10  Lit'l Smokies - chopped
1 med. Vidalia onion - chopped
1/2 can of drained-rinsed black beans
1/2 lg. tomato - chopped-sliced
1/2 avocado - chopped-sliced



In a non-stick pan, combine Lit'l Smokies and onions with a tablespoon of butter and saute' a few minutes.  Add beans, chopped tomato and a tablespoon of good Balsamic vinegar.  Raise heat, stir a bit and let simmer until liquid is reduced to a sauce.  Serve with sliced tomato and avocado.  This may seem an odd combination but it's one that has lots of fiber, flavor, protein and fresh-crispiness from the vegetables. . .Lin
