1/2 Vidalia onion
1/2 can of pinto beans
rinse and drain
1/4c blue cheese crumbles
1 sliced pickling cucumber
Chop or slice the tomato and onion. Add beans, top with cheese and garnish with cucumber. Drizzle with Lemon-Oil, Raspberry Vinaigrette or Honey Mustard dressing. This makes one big bowlful or two small side salads. . .Lin
