Beans and Beets

Combine for a quick lunch or a side-dish for dinner:


Leftover beets and 1/2 can drained-rinsed black beans in a small pan. Add 1/2 a Vidalia onion, sliced very thin. Simmer a few minutes until the beets and beans are warm, toss a few times to soak and heat the onions. Drain the cooking liquid, add crumbled Feta or Blue Cheese. Nice and quick. This tasted great with a big glass of iced Sun Tea. . .Lin
