4 carrots, peeled and cut in chunks
1 green pepper, cut in thirds then
slice
1-2T coconut oil
2 large shallots, sliced
2 large garlic cloves, sliced
1 medium onion, quartered and sliced
¾c slivered almonds (not shown)
12oz frozen, thawed shrimp
Tamari and Sweet Chili Sauce
Saute' the carrot and green pepper in coconut oil, covered about 8 minutes. Add the three types of onion. Cover and saute' over low heat 5-10 minutes. Add almonds, shrimp a splash of tamari and sweet chili sauce. Cover and heat over a low flame another 5 minutes or so. Serve over pasta, rice or rice noodles. Makes 2 large servings. . .Lin
