Vegetable Chowder


2 red onions – quarter and slice
3 large cloves garlic – chopped
4 stalks of celery – slice-chopped
4 carrots – scrubbed and slice-chopped
3 large Yukon Gold potatoes – rough chopped
3 ears of corn – cooked then cut off cob
many (20?) grinds of fresh black pepper
1-2T bacon grease, butter or oil
rosemary, bay leaf, parsley or thyme – optional



1-2T chicken or vegetable soup base
1c Half & Half

Combine all the vegetables in a 5 quart pot. Saute' with 1-2T of butter – etc. After 5-10 minutes, add 3c water and simmer until all the vegetables are done the way you like them. Just before serving add soup base and half and half. Bring to a tiny-bubble boil and serve. This could also be Fish Chowder by adding about 1# pre-cooked cod, pollack or other white fish, with the last 2 ingredients. . .Lin
