Florentine-Onion Eggs



2c beautiful fresh spinach leaves
½ medium onion – sliced
2 lg. eggs















Using a scissors, cut the spinach into big pieces. Steam, covered, in a little water in a medium frying pan with the onions for about 5 minutes until the spinach wilts a bit. Add eggs and stir gently for a minute or so. Cook on one side, then flip. Turn off heat, cover. Let stand for a few minutes, plate and serve. Season as desired. . .Lin
