1# lean beef stew meat
2 sm. onions
2T extra virgin olive oil
2T heavy Balsamic vinegar
2 14.5oz. cans stewed
tomatoes
2 center stalks of celery
with greens
2 15.5oz. cans chili
beans
Combine stew meat, cut in small pieces, with a little bit of finely chopped onion, oil and vinegar. Cook and brown while stirring a while. When meat is nicely browned add a little water or juice from tomatoes to loosen the brownings in the pot. Continue with this browning and deglazing for a few minutes until the meat is well browned. Add finely chopped tomatoes, onion, celery and tops and beans. Bring mixture to a low-bubble simmer and cook this way, covered, for about an hour. At the end check seasonings and make any necessary additions. Serves a lot of hungry people. . .Lin
