Onion and Garlic Florentine Egg Bake


3 eggs
½c milk
1-2T canola oil or extra virgin olive oil
2T Bisquick or corn muffin mix
¼t± each: salt and nutmeg
¼c finely grated Parmesan cheese




1 med-lg onion
1 lg elephant garlic clove – or
~ 1 bulb regular garlic
10oz. thawed-drained package of frozen spinach




In a medium bowl, whisk together the eggs, milk, oil then add the dry ingredients, whisk again until blended. Chop the onion and garlic into a buttered 9” square glass pan. Add spinach to the bowl. Stir together then pour over ingredients in the glass pan. Sprinkle with more grated cheese, then bake at 325° for 35 minutes, until a knife inserted toward the center comes out clean. Put under the broiler for a few minutes to brown and crisp the top a little. Serves 4-6. . .Lin
