This is another favorite creation of my sister's. Arrange a handful or two of mixed greens and onions in the bottom of a big shallow salad bowl. In a medium bowl, combine the next 4 ingredients, add a drizzle of olive oil and some good Balsamic vinegar. Add seasonings, toss then marinate in the refrigerator an hour or two. Serve with blue cheese crumbles and blue cheese dressing, or just a drizzle of the Balsamic. Makes 2 big salads.
