1-1/2# chicken thigh meat
2T butter
2T white balsamic vinegar
1-1/2c chopped celery
2 med. onions - chopped
1 green pepper - chopped
1 red pepper - chopped
1 28oz. San Marzano tomatoes - chopped
2c water
1T fresh ground pepper
1T fresh ground garlic / sea salt
1T raw sugar
1T cumin
1T med. hot chili powder
*2 cans of black beans - drained / rinsed
1 can chili beans and 'gravy'
1-1/2c frozen corn
Remove fat from the chicken then cut the meat into bite size pieces. Saute' the chicken in butter and vinegar, until nicely browned. Add the chopped, vegetables, tomatoes, water and seasonings. Simmer for a half hour. Add the *beans, and corn. (*after seasoning my chili I decided it didn't need the second can of chili beans - shown - so I swapped those out for another can of black beans.) Combine well, cover and simmer another 20-30 minutes. . .Lin
