2 jumbo fresh brown eggs
grated 'hard' cheese
Saute' the mushrooms and onion in the butter. When starting to brown, add torn spinach and tomato. Cover and let cook a few minutes to wilt the spinach. Add the eggs and stir just enough to blend.
