Quinoa, Beans and Vegetables

½c quinoa - red, white or multi-colored
½ med.-lg. onion - chopped
3 celery stalks - chopped
2 lg. carrots - julienned then chopped
2T butter
salt and pepper or seasoned salt




Sauté all the above in a medium pan or pot.  When everything's browning a little and becoming translucent, add 1-2c water, white wine, chicken or vegetable broth.  Simmer half an hour or more.  Add 1 can drained and rinsed beans.  Black beans, cannelloni, or garbanzos.  This makes a great high protein accompaniment to a steak, sautéed shrimp, chicken or lamb chop, or as a vegetarian entree.
