½ sm.-med. yellow onion
3T butter
½c white wine, gin or Vodka
½c water
1T fresh ground garlic sea salt
1T fresh ground black pepper
I got a terrific deal on chicken thighs the other day at Super One, but didn't use them until this morning. They were just starting to get a little funky. . .I pulled off all the fat and cut of the rest. Rinsed them well, and put them in a shallow pan. I covered them with a layer of salt, and gave them a good salt-scrub before rinsing and drying again. This knocks several day off their normal use-by date. After patting them dry, they went into the pot with that group of ingredients.
Now that it's all happily simmering. . .I would have used coconut oil had I been thinking, since Coconut Oil pretty much says CURRY!! Simmer, with thighs meat side down, for 30 minutes.
Meanwhile prep your vegetables. Today, for me it's:
1-3T AROY-D Red Curry Paste (in the pot)
1c-2c rough chopped celery
2 parsnips - rough chopped
5 little red potatoes - halved
2 big carrots - rough chopped
6 lg. cloves of garlic - cut in half
2 sweet potatoes - rough chopped
2½ sm. yellow onions - cut in 8ths
4" cross-section of daikon radish - sliced
water, chicken or vegetable broth, if needed
a couple T's corn starch for thickening, if needed
1c Golden Raisins, chopped figs or dried apricots
Add the curry paste first, stirring that into the juices in the pan. Then pour in all those great vegetables, and all the rest, including the dried fruit. . .toss everything around a bit to coat it all, then cover and simmer on low a half hour. Check the vegetables for doneness. Also taste the sauce and make whatever adjustments are necessary. Pull a little meat off each thigh, but leave some on the bone.
