A chiropractor appointment, then a stop at my eye doc's office at the south end of the Essentia Health Clinic skywalk to get my glasses adjusted. Afterwards, I had to check out the little Farmer's Market across the street in the Essentia Health employee parking lot. Oh my.....I love Farmer's Markets! The Chef for Essentia Health clinic-hospital cafeteria was there giving out samples. Today it's what's for dinner.
Then I found a stand with awesome radishes, which led to zesty bread and butter pickles, beet jelly, dried cilantro and those cute little tomatoes! As I was leaving, I got sucked in to another stand. As most of you know, I don't bake much. If I did, I'd eat every crumb. . .within a day! I connected with this great lady who's an awesome baker! Do you know how hard it is to find Really Wonderful Coconut Macaroons?? I know. . .I've looked when the craving hits! If you live in Duluth, look no further than the Tuesday Afternoon Essentia Farmer's Market! Then, she gave me a little sample piece of her Almond Rhubarb Bar--with a shortbread crust! Wow! I had to take both!
