Makin' Bacon Crumbles

This is a great way to always have bacon ready to add to casseroles, an omelette, salad, cheddar biscuits, pancakes, steamed green beans. . .anything you'd like bacon on.  Strawberry ice cream? . .Well, maybe not.

1# or any amount of well marbled bacon

Cross-cut it in small slices.  Cook over medium heat until done the way you like it, but cooked enough to be crisp.  Tilt the pan, scoop all the bacon crumbles to the top side of the pan and use a turkey baster to 'suck' up all the liquid grease.  Put it into a clean can or mug, chill and use in cooking or baking.  When the crumbles are cooled, put them in a zip-type plastic bag and store in the refrigerator. . .Lin
