Quick Sweet & Spicy Carrots


  • 1 lg. carrot scrubbed
  • 1T butter
  • Orange-Ginger Spice
  • fresh ground black pepper
  • a good sprinkle of turbinado sugar

Slice the carrot diagonally, into long ⅛"-¼" thick slices. Rinse and drain, then put in a single layer on a flat plate.  Put little cubes of the butter here and there, sprinkle with the spices, pepper and sugar. I like the crunchiness of turbinado, but you could use regular, brown -or- for an interesting flavor, try coconut sugar.  I love it! Coconut sugar is hard to describe, but to me it's similar to the taste of regular sugar that was browned in a dry pan. Warm and toasty.

Cover this with a flattened coffee filter or paper towel. Microwave until they're done the way you like.  I like mine with a little crunch, so for me 1½-2 minutes was just right.  These would be good with roasted chicken and a little side of Lingonberries. Mmmm. . .
