This happened because I bought two Envy apples Tuesday and was going to cut one up for a snack. It evolved into almost 2 quarts of a flavorful, fruity mix. In addition to all shown here, I added more craisins and some currents, 2T turbinado sugar, 1t cinnamon, a splash of Mexican vanilla and fresh ground pepper. Next time I might cross over and add some chopped onion and celery and turn it into a more sweet and savory ambrosia chutney.
Chop and dry-toast the walnuts over medium heat. Slice-chop the tiny oranges using the whole fruit into the pot with the walnuts after they cool a bit. Add chopped dried pineapple, currents, craisins, zest of the lemon and a tablespoon or two of fresh lemon juice. Chop the apples and add those and the sugar and spices mentioned above. Simmer this on low heat for about 15 minutes then cover, remove from heat. Wait an hour before serving. This is good with oatmeal, as a side to grilled chicken or fish or by itself for dessert. . .Lin
