Bacon PANCAKES !!
The original recipe made around 4c of batter, and I'm amazed that every time I make more, they seem better than the last batch! Today I was busy all morning and not hungry, so these finally happened at 2 in the afternoon. The dogs were more attentive than usual, when the scent wafted back to their beds in 'our' bedroom, and woke them up from their naps. I decided to give them a yummy Second Breakfast today 😉 ...and... they loved it!
I started making 4 small ones, then hunger hit and I made one bigger one at the end. First I melted about a teaspoon of bacon fat, from my last Bacon Adventure to grease the skillet. Stir the batter well, then ladle out enough pancakes to fill the pan. Sprinkle on the bacon crumbles and flip when bubbles appear in the tops of each 'cake.' As they were cooking, the whole house was scented with vanilla! The joys of really good Mexican vanilla! Next time I'm thinking I might make Craisin-Walnut Pancakes by hydrating a big handful of craisins in warm water for a half an hour. I'll drain them, put them on a paper towel until the pancakes are ready to turn, and add them with chopped walnuts. Mmmm. . .planning ahead!
