Zingy Chili-Chicken Salad


  • 1/2c craisins 
  • 1-2T white balsamic vinegar

Microwave these in a medium glass bowl for 30 seconds to rehydrate them a bit and give this salad a nice zing from the vinegar.

Now add the second zing. . .2t SWAD Coriander Chutney. If you're a cilantro fan, you'll love this, but beware, it's got a big kick, so start small and add a little at a time, if it needs more bite. (if cilantro's not your thing, you could substitute some dried or fresh chopped parsley) Zing #3 is 1-1/2t Little's Chili Lime

and Homemade Whole Grain Bread
The radishes, green onion and shallot also provides ZING! Chop everything into the bowl along with 2T sweet pickle relish and 4-5oz. roasted chicken.  Stir in enough mayo -OR- mayo and plain Greek yogurt, to hold everything together. A tablespoon of fresh lemon or lime juice will give it some citrusy freshness.

This was an experiment for me. I've made Waldorf type chicken salads and Curry Chicken Salad a lot, but today thought, hmmm, I wonder how Chili Chicken Salad would be!?!  I like it!
