Into a large salad bowl, slice or chop the following:
a big handful of fresh spinach
4 green onions
a few radishes
4oz. roasted chicken
3/4c chopped pecans
2 stalks - 1c chopped - celery
2-3T finely chopped poblano pepper
10 big strawberries (AND their greens!)
~ 2 sm. Cuties or Halo mandarin oranges, leave the peel on, quarter and slice thin - OPTIONAL

The little oranges have very thin, tender peel and they add great citrus freshness, and a touch of bitterness that blends nicely with the other flavors. This turned out so well! It made enough for 3 very big salads or many smaller ones. Today I dressed it with some wonderful Honey Mustard Dressing I made several days ago. I didn't blog it quick enough, and now I'm not remembering the proportions I'll try again. This is a favorite salad dressing of mine that would also be good.

ReplyDeleteThere are SO many great possible fruit and vegetable combinations, aren't there! So glad you and your family like this one. Strawberries and oranges are so good together, especially those great little ones. A little bit of the sliced skin gives great balance to the sweetness!
