Burgundy Beef Roast, Vegetables w/ Celery-Beef-Herb Cream Gravy

vegetables shown
~ (some for the gravy)

Gravy Prep:

combine the vegetables shown in 2nd picture
lots of celery tops
1/4 red bell pepper
1 very lg. garlic. clove
1t fresh ground black pepper
1T of garlic and herb seasoning
2T fig Balsamic vinegar
2T beef Better Than Bouillon 
2c water




Blend well then strain, saving 1-1/2c of the vegetable-infused liquid. Add the soup and blend again, just enough to combine everything.



Put the roast into a 5 quart roasting pan, arrange the vegetables, pour gravy over everything and simmer over low heat for an hour.  Turn off the heat.  Let stand for up to an hour to blend flavors, let the meat slow cook a bit and rest. Heat everything up again, slice the meat and serve. . .Lin
