In a big bowl, whisk together the following ingredients for the dressing:
zest of 1 lemon
juice of 1/2 lemon
3/4-1c real mayonnaise
3T± Italian wine vinegar
~or~ a fruity white Balsamic vinegar
1/3c± brown deli mustard or grey poupon
fresh finely ground black pepper
Add to the bowl these chopped-sliced, washed and dried vegetables:
1 good size 'head' of crispy Romaine lettuce
3 mini or regular English cucumbers
1c± pecan halves
1 med. Vidalia onion
2 colorful mini peppers
3/4c-1c craisins or golden raisins
6oz. roasted chicken cut in bite size pieces
Use a big silicone spatula to fold everything together, gently, so as not to crumble the chicken. Serve this on big Romaine leaves for a nice cool summer salad. . .Lin
