Blended Vegetable Soup


Sauté the chopped-sliced vegetables shown in 2-3T single source EVOO until tender.

3 med. Yukon gold potatoes
8oz. white mushrooms
1/2 green pepper
2 celery stalks

1 med. onion
2 carrots


Add seasonings, bay leaves and 2 quarts of chicken bone broth. Simmer 45 minutes on low-medium heat.


garlic salt and black pepper
2-3T Better Than Bouillon - chicken or vegetable

Serve as is, or blend with an immersion blender.

Garnish with sour cream and a sprinkle of nuts. . .Lin
