I bought a bag of 6 little avocados the other day and they're now just barely soft enough to mash. So naturally, I made avocado toast for breakfast this morning, with the bread I made recently. It was really good! And this made enough to do it again tomorrow morning 😊
1 sm. avocado - mashed
3T chopped Vidalia onion
1/3 lg. tomato - chopped
2-3T lemon-EVOO vinaigrette
Mix this together well and spread on your favorite toasted bread.
I added a sprinkle of my black+cayenne pepper blend and a little garlic salt to wake up all the flavors. The real fun of avocado toast is it can be made so many different ways. Be Adventurous! Happy Cooking. . .Lin
