Caper-Pimento Hummus

Hard to believe I've never made hummus before!  This turned out to be a good combination.

1 16oz can of garbanzo beans (chickpeas)
           drained and rinsed
2  T     peppered olive oil
2  T     capers - drained
2  oz    pimentos - drained
1  lg    clove garlic
juice of 1/2 lemon and lemon zest - optional







Combine ingredients in a food processor.  Blend and serve with pita bread, vegetables or crackers. . .Lin
