1 med spaghetti squash
1 link mild Italian sausage
remove casing and break it up
1 sm onion - chopped
1 lg red potato - chopped
1/4 lg green pepper - chopped
Rosemary seasoning or seasoned salt
Pierce and cook squash, wrapped in a paper towel 2-3 minutes per pound in microwave - or - place in a large water-filled pot and simmer 20 minutes. Cool. Cut in half, lengthwise and remove seeds. Loosen the squash with a fork and create a depression in the center. Place in baking dish.
In a frying pan, cook sausage until almost brown. Drain grease, add a little butter and remaining ingredients. Stir and saute' 5 minutes. Spoon sausage mixture over, and stir into the squash. Cover and bake at 350° - 25-30 minutes. Makes 1/2 stuffed squash - 2 servings. . .Lin
