Beef, Beans and Vegetables

Guess I'm in a beef-and-beans sorta mood!  This is similar to my previous post.

1/2  med onion
1/3  lg sweet pepper
6-8  oz beef round steak
1 c   canned beans - drain and rinse
**1/2 - 1 c sour cream or
   4-8 oz cream cheese
3 ears of fresh corn
- -Boil a pot of water, add the corn, cover and cook 10 minutes.



Cut onion in half, slice onion and pepper, cube the beef and saute together 5 minutes in 1T butter, covered, to bring the water out of the meat and vegetables.  Add a little spicy mustard, barbeque sauce, A1, etc.  Cook a couple minutes then add the beans and heat through.  Serve the corn on the side or cut off the cob and add, at the end, with the beans.


If you cut the corn off, nibble on the cobs a while before you throw them in your compost pile or garbage.  Those little kernels left behind (the corn germ) are so good!  :o)  Makes 2-3 servings.
**One addition I'd make is cream cheese or sour cream at the same time the beans and corn go in.  This would bring the flavor and texture together even more and add another dimension.  . .Lin
