Stir-Fry Beef with Red Beans

Why do we deviate from what works best for us?  Boredom?  Needing variety?  Trying something a friend recommends?  Only to realize - Hey this doesn't feel so great.  Lately I've been trying to balance my diet with more carbs - the good quality kind - but I always go back to knowing what feels better is more protein and fiber and LESS carbs.  It's good to find, and then stick with what works best for each of us.


I saw 2-1/2# of beautiful Round Steak at the store the other day for $12.67, which seemed high until I realized I could cut that into 10 - 4oz servings.  Then at $1.27 each, it seemed like a great deal!

4 oz   lean beef - cut into cubes
some sweet peppers sliced
1 med  sweet onion, sliced
3/4 c beans - rinsed and drained

Stir-fry the meat and vegetables in 1T toasted sesame oil about 5 minutes.  Add 1T tamari (gluten-free soy sauce) and saute' a little longer.  Serve with heated beans on the side, or stir them into the meat and vegetables. . .Lin
