Chicken-Potato Curry


3 stalks of celery - sliced thick
1 lg onion
5 c potatoes - cut in lg cubes
24oz chicken - skinned
6 sm scallions - green onions
15oz curry sauce
1 c raisins - (not pictured)
5-6 lg basil leaves







Saute the celery with 1/4 onion finely chopped for 5 minutes. Add potatoes, chicken, the rest of the onion cut in big cubes, the white part of the scallions, curry sauce, raisins and 15oz water. Simmer 45-60 minutes. Add the green onion tops and shredded basil. Simmer another 5-10 minutes. 1 cup of heavy coconut milk or plain Greek yogurt can be added now if desired. 4 servings. . .Lin
