1 bunch fresh mustard greens
1/2 lg onion - quartered and sliced
1 lg carrot - diced
1/2 # smokey ham cut in julienne strips
1 14.5oz can black beans - drain-rinse
1/8 c chopped macadamia nuts
Greens have a certain bitterness not everyone likes. That's balanced somewhat in this recipe with the blandness of the beans and the sweetness of the onions and carrots. Wash the rough chopped greens well and spin them dry. Saute' the onion, carrot and ham in 1T butter, covered for 10 minutes, stirring a couple times. Add the greens, nuts, beans and 1/2c water. Cover and cook over low-medium heat 10 additional minutes. This pairs well with cornbread or biscuits . .Lin
