Boxwood Basil Scampi - For Two




Saute in a little olive oil and 2T butter:
6-8 lg  garlic cloves - minced
1 med Vidalia onion - chopped

When translucent add:
Zest of 1 lemon
Juice of 1/2 lemon
3T Boxwood Basil - snipped
3T chives - snipped
10 oz  frozen shrimp - thawed
Simmer-cook a few minutes while stirring.







Stir in:
8 oz  sour cream
Salt and lots of fresh ground black pepper
Parmesan cheese - add now or sprinkle on top
Check seasonings, heat a couple minutes longer.  Serve over pasta - about 8 oz - cooked till done the way you like.

  1. This looks great - I am going to try it tomorrow except with low-fat sour cream and regular old basil and maybe just a hint of hot red pepper. Yum!

  2. Hi Katy,

    I usually buy low-fat sour cream and it's great. I wouldn't recommend fat-free however. Regular basil should work well. Boxwood Basil looks totally different but is like a milder version of regular Genovese (sweet) Basil. Hope it turns out well for you. Thanks for posting :o)
