2 med Vidalia onions - chopped big
1 c FROZEN edamames
1-2 mini peppers - slice into rings
1 T butter
fresh ground pepper
fresh ground pepper
If you do this right you don't need water. If you do it wrong, it caramelizes (or burns.) That's not what we want. This dish should taste fresh-steamed, buttered and seasoned just right.
Combine all ingredients in a medium, covered non-stick pan. Heat on low to thaw the edamames and bring the water out of the peppers and onions. Cook this way for about 10 minutes or until vegetables are done the way you like. Add a couple tablespoons of good quality Italian bread crumbs, a sprinkle of Parmesan and salt if needed. This would be a really nice vegetable mix to serve with a sun-dried tomato meatloaf and baked potatoes. . .Lin
