Radish-Edamame Shrimp with Spinach Linguine



1-1/2 c    frozen edamame
5-6 lg      radishes - sliced crosswise
2 med     Vidalia onions - half and slice lengthwise
1 lemon  zest and juice
1 c ±        dry pasta - angel hair or very fine linguine
30  shrimp
butter, sea salt, fresh cracked pepper, Parmesan cheese









In a big pan combine edamame, radishes, onions.  Simmer in a couple cups of water.  Add pasta and lemon zest, simmer a few minutes until pasta and vegetables are almost done.  Add shrimp.  Simmer a few more minutes.  Drain, add lemon juice, butter, salt, pepper and Parmesan cheese.  Toss and serve.  2 servings. . .Lin
