Spicy Black Bean-Corn Salad






1-1/2c fresh cooked corn kernels
Zest     of 1 lime + 2T lime juice
3 lg      green onion bulbs - cut lengthwise and slice
1/2 c    green onion tops
             snip and pack into measuring cup
1 10oz       can Ro*Tel Original diced tomatoes - drained
1 15.25oz can black beans - drained
A pinch of Himalayan pink salt or sea salt
1/4t     maple syrup






This recipe formulated on my way home from buying fresh corn - picked in the morning - at Tom Doyle's farm stand.

He sells tomatoes, zucchini, onions, potatoes, beans later in the season, but for now my focus was on his wonderful corn.

Combine everything in a medium bowl.  Chill an hour or so, toss and serve. . .Lin
