I went to the co-op today and bought 2 giant tomatoes to the $ tune of over $9.00! Pretty amazing. These are just like the huge Beefsteak Tomatoes we used to slice on our hamburgers years ago. This simple salad was amazing, so I had to post it.
1/2 of a huge Beefsteak tomato
3 mini-English cucumbers
lightly peeled
1 perfect avocado
Slice or chop all the above into a bowl. The dressing for this was a nice surprise. We combined a little extra virgin olive oil with a big spoonful of basil pesto, salt and pepper. It was so good!. . .Lin
